Soft Chocolate Chip Cookies

I am a soft cookie girl. I do enjoy a hard cookie too, especially shortbread, but if I had to choose, it’s definitely soft. I’ve tested many recipes, trying to get the right flavour and texture, and finally, in this period of self-isolation, I’ve had the time to perfect it. If I’m gonna have a sweet treat to cheer myself up, then this is it. They take hardly any time to make and bring a whole lot of happiness. What you’ll need:
150g unsalted butter, melted
100g caster sugar
50g brown sugar
1 egg
1 tsp vanilla extract
250g plain flour
½ tsp baking soda
½ tsp sea salt
130g dark chocolate chips

What to do:
Preheat oven to 170°C and line 2 large baking trays with baking paper.

In a large bowl, whisk together butter, caster sugar and brown sugar for about 2 minutes until smooth and most of the sugar has dissolved. Add the egg and vanilla and whisk until combined. Add the flour, baking soda, salt and chocolate chips. Use a wooden spoon or spatula to stir everything together until combined.

Form the dough into 10 even-sized balls and arrange onto baking trays, allowing enough room for them to spread out as they bake.

Bake for 10 minutes, until the edges are just lightly golden but the cookies are still very blonde. Remove from the oven and allow the cookies to cool on the trays for 30 minutes as they are very soft when they first come out, but they will firm up. After this time, the chocolate chips will still be deliciously melted inside the cookies and they are utterly irresistible, so good luck to your kids if they think they’re having some!! Seriously though, hide some for later.
